banana bread (gf, rsf)

this is delicious! i tried to have a small portion as a treat now and again, but that was blown out the window.

unless you are ok with this being made and gone on the same day, only the very self controlled should consider baking this dish.

its gluten free yes, but its better than the versions that include flour.  serve with melted butter, its an absolute banger.

while my current diet strictly doesnt allow bananas, the only carbs in this is from the banana so approx 4g of carb per slice… thats ok in moderation i reckon.

roasted broccoli, fennel & aged cheddar soup with pork fillet, hazelnuts & kale chips

not much beats a hot satisfying soup on a cool wintry evening.  best consumed in front of a roaring fire (ours is a gas fire… does that count?)

this one is deliciously rich, with an added tastiness that comes from the aged cheddar. the kale chips creme fraiche and hazelnuts cut through the decadence of the soup providing a beautifully balanced meal.

cut the pork out of it if you want – this just appeases my husband and the inevitable question “wheres the meat?” haha.  with that said, the pork is awesome with this soup.

pork, chilli, ginger & lime stirfry with lime mayonnaise

my biggest issue with stirfrys is that there is no variety of flavour – everything is covered in the same sauce. so i decided to tackle the problem……….. and matched this stirfry with a creamy lime zest mayo.

and boy, it all came together with perfection.

this is an awesome recipe, flavour packed and nutritious.

now cause i am low carb, i didnt serve it with rice.  but that would be a perfect addition.

pan fried monkfish with garlic roasted broccoli and fennel, kale chips and a beurre blanc sauce

this is a frickin knock out.  fear of empty plate kicked in after the first bite.

the beurre blanc elevates this to next level awesome.  dont be put off by the name of the sauce – it sounds fancy, BUT follow the below directions and its easy – you cant stuff it up.

while the sauce is creamy and indulgent, its paired with the fresh broccoli, roasted fennel and kale so it doesnt get sickly or too much.  its all just a match made in …. heaven.

roast cauliflower & blue cheese soup, with crispy bacon, crispy kale & toasted hazelnuts

yes, soup can be a little boring.  this one is NOT.   pure decadence – the creaminess of the soup balances perfectly with the saltiness of the bacon, freshness of the kale and creme fraiche, and earthiness of the nuts.

i didnt serve any bread with this – its filling enough.  i used the crispy bacon as “dipping sticks” and it was gorgeous.  but if you do want the soup to go further, definitely serve with bread on the side.

i recommend taking your time roasting the cauliflower with a low temperature oven – it extracts more depth of flavour – but if you are in a rush, drive the oven up to 180deg… just know that a little flavour will be lost in the process.

rich chocolate pudding (gf, rsf)

this is next level – rich and gooey…

i rate this as better than any other chocolate pudding or brownie i have ever had, so that means its pretty bloody good.

i added some cherries between two layers of the mixture, then served with some cherries which was beautiful…. you could do that with any fruit… or just serve it as is.

and it only takes a few minutes to make, so no reason not to get into it!

cajun chicken, garlic & bacon brussel sprouts, with kale chips & lemon mayo

i thought this would be a great meal, but nothing prepared me for just how great it would be.  i had empty plate syndrome as i took my last few bits of that spicy cajun chicken, covered in the creamy and zesty mayo.

mmmhmmm……. so good.

brussel sprouts are actually good….. contrary to the belief of those who grew up with their mums boiling the shit out of them.  in this recipe, with garlic butter & bacon, they are incredible.

the kale chips add a delicious crunch and the lemon mayo takes the whole lot to a new level of excellence.

im salivating writing this, so i may just have to remake this tonight………

harissa chicken, with mango, roasted carrot, feta and spinach

harissa is a beautifully balanced spicy paste with garlic, chilli, roasted red capsicum and spices.  its absolutely delicious.

in this dish harissa is used as a marinade for the chicken.  the spiciness of the chicken balances beautifully with the sweetness from the mango, and the warmth, savoury notes of the roasted carrot.

this salad feels gourmet, its bound to please but its really really easy to make – especially if you buy yourself a really good harissa paste…. look at the ingredients and make sure they are as pure as possible.  you should know every ingredient that goes into it! i use sabato.

roast cauli, bacon, garlic, cheese and spring onion salad

this salad is so easy to make. its sooooo tasty and full of texture. roasting cauliflower elevates the depth of flavour and sweetens it up which is perfect with the richness of the cheese and saltiness of the bacon.

i paired this beauty of a salad with a medium rare scotch fillet, but its a bloody good side dish thats going to suit pretty much anything you like.

paprika, lemon & thyme chicken

that striking colour is from the paprika (not chilli!) doesnt it make you want to dive straight in?

this is a warming broth, with a surprising flavour – lemon and thyme are a match made in heaven and alongside the earthiness that comes from the paprika, its a stunning dish.

if you dont like coriander (first up, what is wrong with you!? haha :-))… basil would be beautiful with this as well.

im not eating carbs at the moment which is why this comes solely as a broth, but you could stretch it further by cooking up some jasmine rice or serving it with some crusty bread to dip in the broth.
