this salad is inspired by one of the best salads i have ever had – at chi wah wah down christchurch’s terrace. i had to try and remake it!
fresh fresh fresh, with loads of texture…the creaminess of the avocado pairs beautifully with the sour, salty asian style dressing.
high in vitamins, antioxidants and omega 3 to name only a few, this salad is a fully balanced meal in its self!
super easy to make, and it maintains its crunchy texture for a couple days after (if you manage to hold back and save some for day two!)

the lamb is actually just the “side”in this dish… i have made it with pork belly too… this dish is all about the cauliflower.
its a stand out.
something special happens to cauliflower when you roast it beyond soft – browned, crispy in parts, flavours intensify and it becomes something you just cannot get enough of.
give it a go, and i know youll want to make it again within the week.

one weld i cannot get rid of is going to a movie, and having a snack.
this means i 100% have to go to watch a movie prepared… if not, i am likely to struggle with the temptation of breaking my keto lifestyle… especially those bloody snickers pods! they are the devil!
so here is a very quick snack… so easy to make, and completely satisfies all those snack longings… super delicious, give them a go and they might just end up being your movie snacks too…
swap out the raspberries with any freeze dried fruit, or just have cacao bites!

the flavours were just incredible, its a salad on steroids – so i knew i had to try my hand at replicating it.
and this is perfect – just like the original. there is no doubt itll make an impact at your table!
its easy to make. the effort is in the confit garlic mayo, but please.. pretty please, please make it yourself… the flavour cant be replicated by store bought mayo… i promise itll be worth it and the fam will be impressed!

we are having unseasonably cold weather in new zealand… so much for a strong start to spring! im making the most of staying inside by creating these delicious bites.
you cant get a much better match than cheese and bacon … made for each other – both flavours in these muffins are strong and satisfying.
so easy to make, all ingredients go in a bowl and come together using a hand mixer or food processer. then 15mins later they are ready to eat! whhaaaaatttt!!!
get into it… they are a favourite in my house, even for those who are not keto!
i had a craving for good ole fashioned fish and chips, but with my low carb diet, those traditional potato chips and the fish batter just werent going to fly. dammit!!!
but it didnt turn out to be much of a sacrifice… i adapted, and produced this stunner of a dish.
it blew away the cravings…. and the family didnt even miss the original!

this dish is great as a starter, or a main meal. full of fresh and intense flavours, indulge to your heats content, and there is no guilt!
even if you feel a bit odd having “raw” fish, give it a go and surprise yourself – it may just change your mind.
its a quick and easy dish, with just enough remaining for work the next day. yay.

the savoury and rich notes of the garlic and bacon veges are a perfect compliment to the tender and meaty fish baked in brown butter & lemon slices.
texture comes from the cabbage and brussel sprouts which are only lightly tossed on the heat like a stir fry, and the toastiness of the almonds is the final icing on the cake bringing it all together.
such a quick and easy dish to prepare, but max flavour!
mexican is a favourite in our house… this dish is bursting with flavour and any heat from the chipotle or mexican seasoning is tamed by the avocado (cheese & sour cream – optional)…
this recipe is a great weeknight option – its nutritious, full of vege, good fats and protein… and the best part – from start to finish, its only a 20 minute ordeal.
part of the efficiency is due to the use of two pre-prepared ingredients (slaw and seasoning)…. now i am not usually a huge supporter of this option BUT these are ones i trust because they dont have any ingredients i dont know… and thats always a good sign!
