cajun chicken, garlic & bacon brussel sprouts, with kale chips & lemon mayo

i thought this would be a great meal, but nothing prepared me for just how great it would be.  i had empty plate syndrome as i took my last few bits of that spicy cajun chicken, covered in the creamy and zesty mayo.

mmmhmmm……. so good.

brussel sprouts are actually good….. contrary to the belief of those who grew up with their mums boiling the shit out of them.  in this recipe, with garlic butter & bacon, they are incredible.

the kale chips add a delicious crunch and the lemon mayo takes the whole lot to a new level of excellence.

im salivating writing this, so i may just have to remake this tonight………

roast cauli, bacon, garlic, cheese and spring onion salad

this salad is so easy to make. its sooooo tasty and full of texture. roasting cauliflower elevates the depth of flavour and sweetens it up which is perfect with the richness of the cheese and saltiness of the bacon.

i paired this beauty of a salad with a medium rare scotch fillet, but its a bloody good side dish thats going to suit pretty much anything you like.

moroccan lamb with roast carrots, haloumi and mint mayonnaise

this is a delicious salad!  enough said……….

nah, i cant actually help myself….   mint is always a hit with lamb, in this recipe mint ends up in the homemade mayonnaise.  the earthiness and slight chilli hit of the lamb is perfect with the sweet roasted carrot, and yea, i just love hot cheese………… who doesnt?

making mayo is slightly technical, BUT well worth the reward of making it at home.  its much tastier and doesnt have a shit load of additives.  it also gets super quick to make as you master the talent.

if you dont want to make your own, use store bought mayo – i recommend best foods.

cacao, peanut butter & raspberry brownie

this is my take on an easy peesy refined sugar free brownie – and it only uses bananas to sweeten – no other sugar substitutes! how GOOD is that!!!

its SO simple to make (5 mins plus cook time!),  its decadent, luxurious and delicious…  crispy on the outside, soft and gooey in the centre, its just like normal brownies!  i hope you never go back to sugar laden cafe made brownies ever again!

sometimes when i am sitting on the couch after dinner watching TV, hubby playfully asks “wheres the pudding?”…. i can pretend i had it planned all along and say “gimme 5 babe!”

replace the raspberries with whatever is in season – or leave it out all together! its good either way.

a take on nachos: chipotle mince, with kumara chips, avocado, tomato and coriander salsa

nachos are a fave, aren’t they!?

here’s my take – the guilt-free version.

this dish WILL provide the satisfying “comfort” factor that comes with a plateful of spicy mince and “chips”…. but this baby is packed full of good things.  swapping out those corn chips for kumara, means you can pretty much eat as much as you like without filling that temple of yours with grease ….

(did you know that one serving of corn chips, is approx only 7 chips… AND corn chips are no better than your bought potato crisps! thats scary!)

anyway….. with this dish, i can bet on it that you won’t miss the corn chips.
