these will satisfy chocolate cravings, as well as fill you with good fats, fibre and protein.
loaded with texture from the slivered almonds, rich from the chunky chocolate bits – satisfying! quick and easy to make, they get in the oven within 10 minutes.

ingredients
100gm grassfed butter
1/2 cup xylitol (or other sugar free sweetener)
1 egg
1tsp sugarfree vanilla
1 cup healtheries dark chocolate sugar free baking bits
70gm slivered almonds
1/2 cup cocoa (i use equagold – go quality or don’t bother!)
1 2/3 cups almond flour
8 tblsp coconut flour
1 heaped tsp baking powder
Method
pre-heat oven to 180deg C.
line a baking tray with baking paper.
melt butter and sweetener in microwave. mix to dissolve the sugar. add the egg and vanilla, then beat well.
add the almonds and the baking bits and mix.
sift the dry ingredients into the bowl, and mix well. if its still a bit wet, add some extra almond flour.
shape the mixture into balls and place on the lined baking tray. the mixture makes around 16-20 cookies depending on your preferred size. use a fork to press down on each ball into a cookie shape.
place in the oven for 12-15mins or until slightly browned.
leave to cool, and serve with your favourite coffee.
store in an airtight container in the pantry.
