we are having unseasonably cold weather in new zealand… so much for a strong start to spring! im making the most of staying inside by creating these delicious bites.
you cant get a much better match than cheese and bacon … made for each other – both flavours in these muffins are strong and satisfying.
so easy to make, all ingredients go in a bowl and come together using a hand mixer or food processer. then 15mins later they are ready to eat! whhaaaaatttt!!!
get into it… they are a favourite in my house, even for those who are not keto!
makes approx 12 muffins
pre-heat oven to 180deg celsius
ingredients
250gm streaky bacon, precooked and chopped into small pieces
2 cups colby or cheddar cheese, grated
1 cup mozzarella, grated
2 tblsp psyllium husk
6 eggs
1 tblsp baking powder
salt
pepper
paper muffin cups (if using)
method
grease a muffin tray, or line the muffin tray with paper muffin cups – i prefer the latter, less mess!
if using a food processor, place all ingredients in the food processor bowl and mix until combined.
if using an electric hand mixer, please all ingredients in a bowl and mix until combined.
spoon the mixture into each of the muffin cups.
place in the oven for 10-15mins.
remove from oven when browned and cooked. let cool, then store in an airtight container.
this is so yummy sliced, with a little butter. blitz in the microwave for 10 sec when they are a few days old, they will freshen right up!
