this is next level – rich and gooey…
i rate this as better than any other chocolate pudding or brownie i have ever had, so that means its pretty bloody good.
i added some cherries between two layers of the mixture, then served with some cherries which was beautiful…. you could do that with any fruit… or just serve it as is.
and it only takes a few minutes to make, so no reason not to get into it!
serves 2
pre-heat oven to 180deg.
50gm butter
2 tblsp peanut butter
2 tblsp maple syrup (replace with stevia or xylitol if you want to go keto on this baby)
3 tblsp high quality cocoa, or cacao powder (i use equagold cocoa)
4 tblsp almond meal
fruit (optional – i used cherries, but boysenberries, raspberries, blueberries would all be amazing)
grease 2 ramekins with butter.
melt the butter with the peanut butter. add the maple syrup and stir to combine.
add the cocoa and the almond meal and mix well.
if using fruit, place a spoonful of mixture at the bottom of each ramekin. top with 2-3 pieces of fruit and then top with the remaining mixture.
place the ramekins in the oven for 20 minutes.
remove from the oven and let sit for a few minutes. turn out onto serving plate and serve with double cream (i use lewis road), or coconut yoghurt.
