this salad is so easy to make. its sooooo tasty and full of texture. roasting cauliflower elevates the depth of flavour and sweetens it up which is perfect with the richness of the cheese and saltiness of the bacon.
i paired this beauty of a salad with a medium rare scotch fillet, but its a bloody good side dish thats going to suit pretty much anything you like.
serves 4 (unless its all you have for dinner!)
1 cauliflower, florets cut off approx same size
400gm free farmed streaky bacon
6 spring onions, finely chopped
4 tblsp butter
4 cloves garlic, crushed
cheddar cheese, grated (as much as you fancy! i had about a cup)
avocado oil
salt
pepper
pre-heat oven to 180deg.
melt the butter, add the crushed garlic to the butter.
toss the cauliflower in oil, the butter & garlic and generously season with salt.
place cauliflower on an oven tray and roast for 30-45 minutes – completely depends on how big your florets are, and how crunchy you like the cauliflower. i like a bit of crunch still.
while the cauli is cooking, fry off or bake the streaky bacon. do NOT undercook the bacon – it should get super crispy. I like to bake it as it evenly cooks the bacon and it goes nice and crispy. turn out the cooked bacon onto some kitchen roll paper to dry out. slice into desired size for garnishing the cauliflower.
when the cauliflower is nearly cooked, toss through some ground pepper and top with the grated cheese – grill for 5 minutes.
remove from the oven and top with the bacon and spring onions.
