this is a completely guilt free treat. so this slice is seriously yummy, and it feels indulgent but………… its full of protein, magnesium and iron.
no flour, no refined sugar, instead it has ummmmm chick peas in it … yes you read that right CHICK PEAS…
so now you know that “cake” and “healthy” belongs in the same sentence.
hide it from the kids and your partner or you wont get any for yourself.
this makes a 19.5cm x 28.5cm tin.
2x 400gm cans of chickpeas, drained
1 cup peanut butter
3/4 cup pure maple syrup (or coconut nectar)
2 teaspoons vanilla
1/2 lemon, juice only
1/2 tsp salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 packets of sugar free chocolate (or dark chocolate – just know it will have some refined sugar in it), roughly cut into small pieces
Preheat oven to 180deg C.
Grease a 19.5cm x 28.5cm baking tin.
place all ingredients except chocolate into a food processor and blend until smooth. remove from the food processor and add chocolate pieces. combine with a spatula or spoon.
place mixture in your baking tin and chuck it in the oven for 20 minutes. it will be a bit brown on the sides, but still have that brownie consistency in the middle.
cool in the pan then turn out.
