i do a boot camp 5 mornings a week, and our trainer has two favourites (… that i know of) – chocolate and peanut butter. this recipe was a happy birthday treat….. we all got some of it though! i couldnt give it ALL away!
this is great as an after dinner snack to help with the pudding cravings, to help with the mid morning or mid afternoon slump period, or a protein hit after a gym session.

get into it. its easy to make, AND its a healthy snack that tastes awesome.
makes, a lot. depends how big your balls are 🙂 (i made 20 at golf ball size)
1.5 cup dates
2 cup natural cashews
1 cup raw peanuts
2 tablespoons melted coconut oil
1 teaspoon vanilla essence
4 tablespoons peanut butter (please, please make sure the ingredients are just peanuts and salt!)
4 tablespoons cacao powder
½ teaspoon salt
chuck all the ingredients in a food processor. blitz til it starts to come together. form into balls.
keep in an air tight container, and consume at will.
