this might seem a wee bit like a cuisine clash (it is!!!) traditionally I am not big on that….however, i reckon it works (maybe it’s the coriander that ties the meatballs & guac together).
this is just a fun dish to eat and gets everyone involved. its fun making your own wraps, and choosing the ratio of ingredients per wrap. just make sure one person doesnt take all the meatballs……………………. 🙂
these meatballs are so tightly packed with flavour that its hard to stop after you have had number one (…. just ask my fam!)
in addition to the below recipe, you could include a garlic yoghurt (plain yoghurt with crushed garlic & salt)… and experiment with the wrap fillings – whatever takes ya fancy! yum!
serves 3
for the meatballs
600gm lamb mince
1 red onion, grated
2 tblsp brown breadcrumbs (just cause I refuse to do white anything)
2 tsp coriander seeds, toasted & ground
1 tsp cumin seeds, toasted and ground
1 tsp paprika
1-2 tsp chilli flakes (add more if you like it spicy!)
½ tsp turmeric
2 cups roughly chopped fresh coriander
2 inches ginger, grated
2 garlic cloves, crushed
2 tsp salt
Pepper
for the guacamole
2 ripe avocados
1 large red tomato, chopped into small pieces (I add this with the skin & seeds but up to you if you want to remove)
2 medium garlic cloves, crushed
1 tsp chilli sauce
1 cup roughly chopped fresh coriander
squeeze lemon or lime juice
1 tsp salt
Pepper
for the wraps
6 wholemeal flour wraps (I use farrah wraps as they are reliable and don’t tear!)
wrap fillings
well its up to you! I used:
cos lettuce leaves
grated cheddar cheese
preheat oven to 180deg.
for the meatballs
add all the ingredients into a bowl, and using your hands, combine well.
shape into golf ball sized meatballs, and place on a board or plate in the fridge.
for the guacamole
remove the flesh from the avocado and place in a bowl. smash roughly with a fork (I like to leave it partly chunky J)
add the remaining ingredients and combine.
taste and season as required.
transfer to fridge until serving.
cooking the meatballs
heat frypan to high. add some cooking oil, and add the meatballs. Make sure they are not touching – this reduces the risk of them stewing. we want them to be browned nicely and form a slight crust!
fry to a generous brown on all sides and then transfer to oven to finish cooking through. It usually takes me about 5 mins tops.
to assemble
place the meatballs, guacamole and garnishes in separate serving bowls, or on a platter.
serve with the wraps.
consume and enjoy (please)
