this is my take on an easy peesy refined sugar free brownie – and it only uses bananas to sweeten – no other sugar substitutes! how GOOD is that!!!
its SO simple to make (5 mins plus cook time!), its decadent, luxurious and delicious… crispy on the outside, soft and gooey in the centre, its just like normal brownies! i hope you never go back to sugar laden cafe made brownies ever again!
sometimes when i am sitting on the couch after dinner watching TV, hubby playfully asks “wheres the pudding?”…. i can pretend i had it planned all along and say “gimme 5 babe!”
replace the raspberries with whatever is in season – or leave it out all together! its good either way.
serves 2 (in individual ramekins)
1 very ripe banana
1 heaped tablespoon of peanut butter (i love crunchy, but either will work)
2 tsp butter (optional, but it helps the outside to go crunchier)
3 tblsp cacao powder
3 tblsp raspberries (fresh or frozen)
6 raspberries for garnish (fresh or frozen, optional)
accompaniment – thickened cream, coconut or natural yoghurt
pre heat oven to 180 deg.
grease 2 ramekins well with butter, the bottom and the sides.
put the banana in a bowl and mash well with a fork. add the peanut butter and butter to the bowl. place in the microwave for 1 minute. beat the mixture well to incorporate.
add the cacao to the mixture, and mix well. the batter should be thicker than cake batter, but not as thick or dry as cookie dough!
put a tablespoon of batter at the bottom of each of the ramekins. top each ramekin with half of the raspberries (1 1/2 tblsp per ramekin). divide the remaining batter on top of the raspberries evenly across both ramekins.
place in the oven for 20-25 minutes. less time will mean the brownie is more gooey and not as crunchy around the outside. depends how you like it!
once cooked, leave the brownies in the ramekins for 2-3 minutes before running a fork around the brownies and turning out into your serving bowls.
top with the remaining raspberries.
serve with thickened cream, or coconut yoghurt, or natural yoghurt.
