this is a go to dinner i make when im a bit short of time, or my creative juices arent flowing. its delicious and healthy. the leftovers are also super good for lunch the next day!
i serve the chipotle chicken mixture with avocado, tomato, lettuce and cheese but the beauty of this recipe, is you can pick your own garnishes based on what you fancy…. fresh corn kernels are excellent too!
this will take you 30 mins to chuck together, its a great weekday meal and you dont have to compromise on taste!
the kids and the hubby will love it……….. and ask for it again and again………..
ps reduce the chillis if its not as popular in your house! (4 chipotle chillis as per this recipe makes it a bit on the hot side!)
serves 2
for the chicken
4 free range chicken thighs, or 2 chicken breasts
1 brown onion, thinly chopped
6 garlic cloves, crushed
4 tsp chipotle chillis, in adobo sauce – less if you dont want it too hot! (if you dont have chipotles, substitute for 2 chillis, and 3 tsp smoked paprika)
1 tsp cumin powder
2 tsp coriander powder
2 tsp paprika
1 tsp dried oregano
1 tin whole peeled canned tomatoes, crushed
1 tsp smoke essence (optional)
1/2 lemon, juice only
2 cups coriander, roughly chopped
salt
pepper
for the garnishes
4 wraps (i used farrah wholemeal wraps)
2x ripe red tomatoes, cubed
1x avocado, cubed
1x red onion (finely sliced, placed in water with a little vinegar or lemon – this just takes the “sting” away from the raw onion)
grated cheddar cheese
lettuce leaves
sour cream
if using chicken breasts, preheat the oven to 180deg Celsius.
for the chicken
heat saucepan or frypan to medium heat. add the onion, garlic and chilli and season. cook until the onion is softened, but dont brown.
while the onion is softening, heat another frypan to high. if using chicken thighs, add to the frypan and brown and cook through. if using chicken breasts, sear to brown on both sides, and then transfer to the oven until cooked through. usually about 10-15mins depending on size of the breast.
add the spices to the onion, and cook until fragrant. add the tomatoes.
once cooked, cut the thighs up into small squares and add to the tomato mixture. if using breast, shred the breasts with 2 forks and add the chicken to the tomato mixture.
simmer until the tomatoes have reduced.
for the garnishes
prepare the garnishes, and if enabling guests or family to serve themselves, place the garnishes in separate serving bowls.
to serve
add the lemon juice to the chicken. taste the mixture, and season further if required.
add the coriander just before serving.
layer the ingredients in the centre of a wrap with the ingredients as you like. fold the bottom up and the sides. consume
tip: i use foil to wrap the wraps up… it keeps all the ingredients and juices within the wraps. its really easy to tear as you work your way through the wrap.
